Where does the name of the food stand, 7even, come from?
“Well actually, it’s simply a name that stuck. We thought it was catchy and memorable, which is exactly what we aim for with our dishes.”

We love it! Could you explain the background and inspiration behind your dishes?
“Definitely, so our dishes are inspired by the vibrant flavors of the Mediterranean, with a special focus on Moroccan cuisine. We love to bring a touch of Morocco’s rich culinary traditions, such as briwat and tajines, to our diverse offerings which include pitas, salads, and soups.”

Incredible! We’re curious, though… Where do you source your ingredients from?
“We strive to source authentic ingredients directly from Morocco and the broader Mediterranean region, ensuring that our dishes are as genuine as they are delicious…”

What dish has become a “crowd’s favorite” at your stand, and can you guess why?
“Our falafel, whether in a pita or salad, is a huge hit. Its popularity likely comes from its rich flavors and the satisfying texture that we’ve perfected. Our barbecued chicken is another top pick, loved for its smoky richness. I’ll make some for you in a bit, you should try it out yourself…”

Can’t wait! So, what options do you offer for visitors who are vegan?
“We have a good selection of vegan-friendly dishes, including our falafel and various salads. We ensure that vegans find hearty, flavorful options at our stand.”

Great and do you also accommodate dietary restrictions such as intolerances?
“Yes! We’re very flexible with our dishes. For example, customers can personalize their salads in our system by using the big iPad in front of our stand. This makes it easy to exclude ingredients they need to avoid.”

What are some of the healthy choices available at your stand?
“While we’re known for our hearty, flavorful dishes and snacks, we also offer healthier options like freshly made juices, smoothies and grilled vegetables.”

What motivated you to start this food stand, and how long have you been working with Market 33?
“I’ve been here for five years (!). My motivation came from noticing a gap in Market 33 for healthy, flavorful salads and Mediterranean dishes. There were already a few Asian food stands to choose from, but nothing Mediterranean. Which led me to start 7even.”

Amazing. And will your menu change from time to time, or do you plan to keep it consistent?
“We like to keep our menu dynamic, introducing new items and phasing out less popular ones. We do this roughly every 7 to 8 months to keep our offerings fresh and exciting.”

Tell us, is there an underrated dish that you think more people should try?
“Honestly? All our dishes are well-loved by our customers. My personal favorites, however, include the BBQ Chicken Pita and Tajine Fish, which I believe deserve even more recognition. Oh, and perhaps a little reminder that salads and pita’s taste amazing on Fridays too ;-).”

What has been the most delightful or surprising customer feedback you’ve received so far?
“The best feedback is when customers tell us our salad is the best they’ve ever had. It’s always rewarding to hear that kind of praise!”

We totally get that. Do you have any goals for the upcoming year?
“We’re considering expanding and maybe opening more locations under the 7even brand. The sky’s the limit!”
